Strawberry Crunch Poke Cake

A delightful dessert combining moist vanilla cake with sweet strawberry flavor and a crunchy Oreo topping, perfect for summer gatherings or birthday parties.

  • 1 box of vanilla cake mix
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 package of strawberry gelatin
  • 1 cup of boiling water
  • 1 cup of cold water
  • 1 cup of Cool Whip
  • 1 cup of crushed Oreos
  • Fresh strawberries, halved

Instructions

  1. Preheat the oven according to the cake mix instructions and prepare a 9×13 inch baking pan by greasing it lightly.
  2. Mix the cake batter by combining vanilla cake mix, 1 cup of water, 1/2 cup of vegetable oil, and 3 large eggs in a large mixing bowl. Blend until smooth.
  3. Bake the cake in the greased pan according to package instructions, typically around 25-30 minutes, or until a toothpick comes out clean.
  4. Cool the cake for about 10 minutes in the pan.
  5. Prepare the gelatin by dissolving the strawberry gelatin powder in 1 cup of boiling water, then add 1 cup of cold water and stir.
  6. Poke holes all over the top of the cooled cake with a fork.
  7. Add the dissolved gelatin mixture over the poked cake, allowing it to seep in.
  8. Refrigerate the cake for at least 2 hours to set the gelatin.
  9. Top the cake with Cool Whip, spreading it evenly.
  10. Add the crushed Oreos on top of the Cool Whip and garnish with fresh strawberries.
  11. Serve chilled by slicing the cake into squares.

Notes

Use fresh strawberries for best taste and experiment with different flavored gelatins to change things up.
