Strawberry Glazed French Crullers

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 4 large eggs
  • Oil for frying
  • 1 cup powdered sugar
  • 1/4 cup fresh strawberries, pureed
  • Strawberry sugar for sprinkling

Instructions

  1. Start by boiling: In a saucepan, combine the water, unsalted butter, sugar, and salt. Place the saucepan on the stove over medium heat. Bring the mixture to a boil while stirring, so the butter melts completely.
  2. Add the flour: Once the mixture reaches a boil, quickly add in the all-purpose flour. Stir the mixture vigorously with a wooden spoon or a spatula until it forms a ball of dough.
  3. Cool down slightly: After forming the dough ball, remove the saucepan from the heat. Let the dough cool for a few minutes.
  4. Incorporate the eggs: Add the large eggs one at a time into the cooled dough, mixing well after each addition until smooth.
  5. Pipe the dough: Fit a large pastry bag with a star tip and fill it with the dough. On a parchment-lined baking sheet, carefully pipe the dough into ring shapes.
  6. Heat the oil: In a deep fryer or a deep saucepan, heat the oil to 350°F (175°C).
  7. Fry the crullers: Once the oil is hot, gently place the piped dough rings into the oil and fry for about 3-4 minutes on each side or until golden brown.
  8. Prepare the glaze: While the crullers are frying, whisk together the powdered sugar and pureed strawberries in a bowl.
  9. Glaze the crullers: After frying, remove the crullers and place them on a paper towel-lined plate. Dip the tops of the crullers in the strawberry glaze.
  10. Finish with strawberry sugar: While the glaze is still wet, sprinkle strawberry sugar over the top of the crullers.
