Stuffed Bell Peppers

Delicious and customizable stuffed bell peppers filled with ground beef, rice, and spices, perfect for a weeknight meal.

  • 4 large bell peppers
  • 1 lb ground beef (or sausage, turkey, chicken, or vegetarian substitute)
  • 1 cup cooked brown rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Shredded cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
  3. Cook the ground beef with the chopped onion and minced garlic in a skillet over medium heat until browned.
  4. Mix the cooked brown rice, diced tomatoes, Italian seasoning, salt, and pepper into the skillet with the beef.
  5. Stuff the bell peppers with the meat mixture, packing it tightly.
  6. Arrange the stuffed peppers upright in a baking dish with a little water at the bottom.
  7. Cover the dish with aluminum foil and bake for 25 to 30 minutes.
  8. Add shredded cheese on top and bake uncovered for an additional 10 minutes.
  9. Serve warm with a garnish of fresh herbs if desired.

Notes

For a vegetarian option, substitute the meat with quinoa or lentils. Serve with a side salad for a complete meal.
