  • 2 lbs boneless skinless chicken breasts
  • 1 cup pineapple chunks (with juice)
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tsp ginger powder
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Green onions for garnish

Instructions

  • 1. Place chicken breasts in the bottom of the crock pot.
  • 2. In a bowl, whisk together pineapple (with juice), soy sauce, brown sugar, ketchup, garlic, and ginger.
  • 3. Pour sauce over the chicken.
  • 4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
  • 5. Remove chicken and shred or slice as desired.
  • 6. In a small bowl, mix cornstarch and water to create a slurry.
  • 7. Stir slurry into the sauce in the crock pot.
  • 8. Return chicken to the crock pot and cook on HIGH for 15–20 minutes until sauce thickens.
  • 9. Garnish with green onions and serve over rice.
