Recreate the beloved Taco Bell Beefy Melt Burrito at home with savory ground beef, creamy beans, fluffy rice, crunchy Fritos, and gooey cheese.

  • 1 pound ground beef
  • 1 can refried beans
  • 2 cups Mexican rice, cooked
  • 1 cup Fritos
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup taco sauce
  • 6 large flour tortillas

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Stir frequently to evenly cook the beef and break it up into small pieces.
  2. Once the beef is browned, drain excess fat by tilting the pan and spooning out the liquid.
  3. Add the refried beans to the skillet with the browned beef. Stir well to combine.
  4. Then, add the cooked Mexican rice, diced tomatoes, and taco sauce. Mix everything together until all the ingredients are heating through.
  5. To prepare the tortillas, warm them in a separate pan or microwave for about 20 seconds.
  6. Once the tortillas are warm, lay one tortilla flat on a clean surface. Place a scoop of the beef mixture in the center.
  7. Top this mixture with a handful of Fritos and a generous sprinkle of shredded cheese.
  8. To fold the burrito, start by folding in the sides of the tortilla, and then roll it up tightly from the bottom.
  9. Optional: Grill the burritos on a skillet until crispy and the cheese is melted.
  10. Serve warm and enjoy!
