Tiramisu Cookies combine the flavors of classic Italian tiramisu in a bite-sized treat, featuring coffee-soaked cake flavors with creamy mascarpone and a dusting of cocoa powder.

  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp instant espresso powder
  • 1/2 cup mascarpone cheese
  • Powdered sugar and cocoa powder for dusting

Instructions

  • 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • 2. In a bowl, cream butter and sugar until fluffy.
  • 3. Beat in egg and vanilla.
  • 4. In another bowl, whisk flour, cocoa powder, baking powder, salt, and espresso powder.
  • 5. Gradually mix dry ingredients into wet.
  • 6. Scoop dough onto baking sheets and bake 10-12 minutes.
  • 7. Cool completely.
  • 8. Mix mascarpone until smooth; sandwich cookies with mascarpone filling.
  • 9. Dust with powdered sugar and cocoa powder before serving.

  • Use good quality espresso powder for authentic flavor.
  • Chill dough before baking for thicker cookies.
  • Store covered in refrigerator for freshness.
