- 1 cup unsalted butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp instant espresso powder
- 1/2 cup mascarpone cheese
- Powdered sugar and cocoa powder for dusting
- 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- 2. In a bowl, cream butter and sugar until fluffy.
- 3. Beat in egg and vanilla.
- 4. In another bowl, whisk flour, cocoa powder, baking powder, salt, and espresso powder.
- 5. Gradually mix dry ingredients into wet.
- 6. Scoop dough onto baking sheets and bake 10-12 minutes.
- 7. Cool completely.
- 8. Mix mascarpone until smooth; sandwich cookies with mascarpone filling.
- 9. Dust with powdered sugar and cocoa powder before serving.
