Tiramisu Cookies

A delightful twist on the classic Italian dessert, these Tiramisu Cookies combine the flavors of coffee, cocoa, and mascarpone cheese in soft and chewy bites.

  • 1 cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coffee (cooled)
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar using an electric mixer until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Mix the flour, baking powder, and salt in a separate bowl.
  5. Combine the dry ingredients into the wet mixture, mixing until just combined.
  6. Add the cooled coffee and mix gently until incorporated.
  7. Scoop tablespoon-sized dollops of cookie dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Cool on a wire rack.
  10. Prepare the frosting by blending mascarpone cheese and powdered sugar until smooth.
  11. Frost the cooled cookies with the mascarpone frosting.
  12. Dust with cocoa powder before serving.

Notes

Serve alongside a cup of espresso or your favorite coffee for a delightful pairing. Store in an airtight container for up to a week.
