Tomato Cucumber Salad

A refreshing and vibrant salad highlighting juicy tomatoes and crisp cucumbers, perfect for hot days and gatherings.

Ingredients

  • 2 large ripe tomatoes
  • 1 large cucumber
  • ½ red onion (optional)
  • ¼ cup fresh parsley or basil
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Wash the tomatoes and cucumber, then pat them dry.
  2. Cut the tomatoes into bite-sized pieces, removing some seeds if necessary.
  3. Chop the cucumber, peel it if desired, and slice it into half-moon shapes or cubes.
  4. Prepare the onion: Slice half of the red onion thinly if using.
  5. Chop the herbs and add them to the bowl.
  6. Mix the dressing: Whisk together olive oil and vinegar or lemon juice with salt and pepper.
  7. Combine all ingredients in a bowl and toss with the dressing.
  8. Let it rest for 10-15 minutes before serving.
  9. Serve the salad in a bowl or on individual plates.

Notes

For best flavor, store dressing separately until ready to serve.
