- 2 cups mashed potatoes (cold, leftover works best)
- 1 cup all-purpose flour, plus more for dusting
- 1/2 tsp salt
- 2 tbsp unsalted butter, melted (plus more for frying)
- 1. Place mashed potatoes in a large bowl and break up any lumps.
- 2. Add flour, salt, and melted butter, mixing until a soft dough forms.
- 3. Turn dough onto a floured surface and gently knead until smooth.
- 4. Roll out into a circle about 1/2-inch thick.
- 5. Cut the circle into 4 wedges (farls).
- 6. Heat a skillet or griddle over medium heat and lightly butter it.
- 7. Cook farls for 3–4 minutes per side until golden brown and cooked through.
- 8. Serve warm with butter.
Notes
- Do not overwork the dough or farls will be tough.
- Serve with eggs, bacon, or smoked salmon for a full Irish breakfast.
- Farls can be frozen after cooking and reheated in a skillet.
