Traditional Irish Potato Farls are soft, pan-fried potato breads made with simple ingredients. Crispy on the outside and fluffy inside, they’re a classic Irish breakfast staple served with butter.

  • 2 cups mashed potatoes (cold, leftover works best)
  • 1 cup all-purpose flour, plus more for dusting
  • 1/2 tsp salt
  • 2 tbsp unsalted butter, melted (plus more for frying)

Instructions

  • 1. Place mashed potatoes in a large bowl and break up any lumps.
  • 2. Add flour, salt, and melted butter, mixing until a soft dough forms.
  • 3. Turn dough onto a floured surface and gently knead until smooth.
  • 4. Roll out into a circle about 1/2-inch thick.
  • 5. Cut the circle into 4 wedges (farls).
  • 6. Heat a skillet or griddle over medium heat and lightly butter it.
  • 7. Cook farls for 3–4 minutes per side until golden brown and cooked through.
  • 8. Serve warm with butter.

Notes

  • Do not overwork the dough or farls will be tough.
  • Serve with eggs, bacon, or smoked salmon for a full Irish breakfast.
  • Farls can be frozen after cooking and reheated in a skillet.
