Tropical Shrimp Rice Bowls

A refreshing and flavorful Tropical Shrimp Rice Bowl featuring succulent shrimp, sweet pineapple, and fluffy jasmine rice, all tossed in a tangy sauce.

  • 3 cups cooked jasmine rice
  • 1/2 Tbsp fresh minced cilantro
  • Salt (to taste)
  • 1/2 lb shrimp (peeled and deveined)
  • 1 tbsp lime juice
  • 2 Tbsp pineapple juice
  • 1/41/2 tsp chili powder (to taste)
  • 8 oz can of pineapple chunks (drained but save the juice)
  • 1/2 cup pineapple juice (for sauce)
  • 3 Tbsp soy sauce
  • 2 Tbsp honey
  • Zest from 1 lime
  • Juice from 1 lime
  • 1/2 tsp chili powder (for sauce)
  • 1 Tbsp fresh minced cilantro (for sauce)

Instructions

  1. Cook the jasmine rice according to package instructions, usually around 15-20 minutes. Fluff with a fork and mix in 1/2 tablespoon of cilantro.
  2. Prepare the sauce by whisking together pineapple juice, soy sauce, honey, lime juice, lime zest, and chili powder.
  3. Marinate the shrimp with lime juice, pineapple juice, chili powder, and salt; allow to sit while the pan heats.
  4. Cook the shrimp in a medium-hot pan until pink and opaque, about 1-2 minutes per side; set aside.
  5. Cook the pineapple chunks in the same pan until browned, about 3-4 minutes.
  6. Combine the sauce with the pineapple and simmer for 2-3 minutes before stirring in the shrimp.
  7. Assemble the bowls by dividing rice and topping with shrimp, pineapple, and sauce.

Notes

Serve warm and consider garnishing with lime wedges and fresh cilantro. Adjust spice level according to taste.
