Tuscan Garlic Chicken Pita Pizzas

A quick and flavorful dish combining garlic chicken, fresh toppings, and gooey cheese on whole wheat pita bread.

  • 2 pieces of whole wheat pita bread
  • 1 pound of boneless, skinless chicken breast
  • 4 cloves of garlic, minced
  • 1 teaspoon of Italian seasoning
  • 2 tablespoons of olive oil
  • 1 cup of marinara sauce
  • 1 cup of shredded mozzarella cheese
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the chicken: Trim any fat from the chicken breasts and cut them into small, bite-sized pieces. Season with salt, pepper, and Italian seasoning.
  2. Cook the chicken: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Then, add the seasoned chicken and cook for 6-8 minutes until fully cooked.
  3. Assemble the pizzas: Preheat your oven to 425°F (220°C). Spread marinara sauce over each pita, leaving a border.
  4. Add toppings: Sprinkle the cooked chicken over the marinara-covered pitas followed by shredded mozzarella cheese.
  5. Bake the pizzas: Place the baking sheet in the oven and bake for 10-12 minutes or until cheese is melted and bubbly.
  6. Garnish and serve: Allow to cool slightly, garnish with fresh basil leaves, slice, and enjoy!

Notes

These pizzas can be customized with various toppings or sauces. Store leftovers in an airtight container for up to 3 days.
