Ultimate Brownie Muffins

Soft, fudgy, and full of chocolate chips, these muffins are the perfect blend of brownies and portable treats.

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: whisk together the flour, cocoa powder, baking powder, and salt.
  3. Combine the wet ingredients: mix the melted butter, granulated sugar, and brown sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Combine the dry and wet mixtures, stirring gently until just incorporated.
  6. Fold in the chocolate chips gently.
  7. Fill the muffin cups about 3/4 full with the batter.
  8. Bake for 18-20 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, consider adding nuts, using mint extract, or incorporating fruits like raspberries.
