Mint Brownie Cookies

Delicious mint brownie cookies combining rich chocolate with refreshing mint flavors, topped with creamy mint frosting and chocolate ganache.

  • 1/2 cup butter (softened)
  • 3/4 cup brown sugar (packed)
  • 2 tbsp granulated sugar
  • 1 large egg (at room temperature)
  • 2 tsp vanilla extract
  • 1 1/4 cup flour
  • 1/2 cup Dutch processed cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 3 tbsp butter (softened, unsalted)
  • 4 oz cream cheese (softened)
  • 1/4 tsp mint extract
  • 1/2 cup powdered sugar
  • 1/3 cup semi-sweet chocolate chips (melted)
  • 3 tbsp heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Cream the butter, brown sugar, and granulated sugar until light and creamy.
  3. Add the egg and vanilla extract, beating until well combined.
  4. Mix the flour, cocoa powder, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients.
  5. Fold in the chocolate chips gently.
  6. Scoop out 9 equal balls of dough and place them on the prepared baking sheet.
  7. Flatten each ball to about 1 inch thick.
  8. Bake for about 10 minutes until soft in the center.
  9. Cool on the baking sheet for 10 minutes, then transfer to a cooling rack.
  10. Prepare the mint frosting by creaming together butter and cream cheese, then mixing in mint extract and powdered sugar.
  11. Finish the ganache by melting chocolate chips and stirring in heavy cream.
  12. Assemble the cookies with a layer of frosting and drizzle with ganache.

Notes

For a festive touch, add crushed peppermint candy on top of the ganache.
