Strawberry Shortcake Freezer Pie

A refreshing no-bake dessert combining strawberry puree with creamy textures and a crunchy crust, perfect for summer gatherings.

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 can sweetened condensed milk
  • 4 ounces cream cheese, room temperature
  • 2 cups strawberry puree
  • 1 prepared 10-inch vanilla wafer or sandwich cookie crust
  • One 3-ounce box strawberry flavored gelatin
  • 1/2 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F.
  2. Combine the strawberry gelatin, 1/2 cup flour, and 1/4 cup butter in a medium-sized bowl.
  3. Mix until the ingredients become fine and crumbly.
  4. In a separate bowl, mix 1/2 cup flour, 1/4 cup butter, 1/4 cup sugar, and 1 teaspoon vanilla.
  5. Create a fine crumb mixture.
  6. Line a baking sheet with parchment paper and bake both crumbles for 7-8 minutes.
  7. Beat the heavy whipping cream and powdered sugar until stiff peaks form.
  8. Beat the cream cheese and sweetened condensed milk until smooth, then add strawberry puree.
  9. Pour the strawberry mixture into the whipped cream and fold gently.
  10. Pour the filling into the prepared pie crust and freeze for 4-5 hours.
  11. Thaw the pie for 10 minutes before serving.
  12. Layer with cooled crumbles just before serving.

Notes

Use fresh strawberries for the best flavor. Make the pie a day ahead for optimal freezing time.
